I have to say, I find some of the categories they consider a violation a bit confusing as well. For instance, there's an item on the check list labeled "Insects, rodents & animals not present; no unauthorized persons." So if the owner's son is home from school and hanging out with his dad behind the counter in the shop, that's the same as there being insects or rodents present? It's not the same to me.

These are pretty exhaustive and comprehensive checklists and while they're a very important part of making sure the food we get is safe and hygienic, I'm going to bet most of our kitchens at home wouldn't pass this test on the first go 'round. I'm not confident mine would. There are some pretty great restaurants in Norristown serving up wonderful food. I'm not going to stop patronizing them because they didn't get a perfect score on the first try.
