Dinner Tonight – Fried Rice and Bacon
It's a Sunday fry-up with this takeout-style dish.
Chinese takeout is delicious, but it can be expensive and I usually feel pretty awful after eating it. However, this fried rice is delicious and has a Chinese takeout flavor to it – without the guilt.
Just keep in mind the following suggestions:
- Definitely use 5 cups of COOKED rice, not uncooked rice. Of course, you can use 5 cups of uncooked rice if you're feeding a small army.
- Don’t overcook the rice or it'll be one mushy mess when you're trying to mix everything together.
Also, I found it a lot easier to scramble the eggs in a separate frying pan and mix the already scrambled eggs into the mixture as opposed to trying to do it in the mix. Maybe my pans just aren’t big enough.
- 1 tablespoon vegetable oil
- 1/4 pound thick-cut bacon, julienned
- 3/4 teaspoon sugar
- 2 1/4 teaspoons soy sauce
- 3 cloves minced garlic
- 1 tsp. minced ginger
- 1/2 head broccoli, florets and stalks cut into 1/4-inch pieces
- 5 cups cooked long-grain white rice
- 1/4 cup low-sodium chicken broth
- 4 large eggs
- Place a wok or large skillet over high heat.
- Add the vegetable oil and bacon and stir-fry until golden and crisp (about 2 minutes).
- Sprinkle the sugar over the bacon and toss.
- Add 1/4 teaspoon soy sauce (watch out – it will bubble up) and continue to stir-fry until the bacon is glazed (about 30 seconds).
- Transfer the bacon to a bowl with a slotted spoon. (Do not line bowl with paper towels.)
- Add the garlic and ginger to the drippings in the pan and stir-fry until fragrant (about 30 seconds).
- Add the broccoli and cook until crisp (2 to 3 minutes).
- Add the rice, the remaining 2 teaspoons soy sauce, the broth and glazed bacon.
- Toss to heat through.
- Push the fried rice to one side of the pan, crack the eggs into the other side and scramble until set (about 1 minute).
- Mix the eggs into the rice.
I can also see this being delicious with chicken added. Just dice up some chicken, fry it in a pan over medium-high heat with about a tablespoon of oil. Add the chicken with the rice just before you add the scrambled eggs.
